We are collecting local historical recipes to turn every bit of the cow into produce that we can eat or otherwise use locally.

We are dreaming of bringing our cattle up in a natural environment that also provides a habitat for other native fauna and flora.

And for farmers to make a living as well as provide for wildlife through micro- circular economies that cut out distributors and reduce our carbon footprint.

We combine traditional preparations with local ingredients for dishes that are authentic and regional. They are not influenced by the bits of meet you can buy in the supermarket, but by the historical ways of preparing beef, back in the days when every edible bit was turned into a dish
