Thank you to all the project partners and the greater community, to everyone who has participated in one way or another, the local recipe donors, who told such wonderful stories from the olden days when one used to use all the bits and cuts of a butchered animal. Thank you to the regenerative farmer who donated the herb- fed bullock, the herdsman who tends the herd of black pollies on Halston hill, the abattoir, the slaughter, the butcher, the chef, the schoolchildren with their teachers, the GAA club and many more.
